A Healthful Start

I found a recipe for Broccoli Feta Omelets with whole wheat toast on health.com. Since I added lots of fresh spinach to the omelets, I decided to have slices of toasted challah bread instead of the whole wheat and roasted potatoes on the side. Keep in mind, I haven’t made any official resolutions besides a vague desire to get more vegetables into our bodies on a daily basis, SO this is definitely a healthful start to the new year.
