We added a miniature Dachshund named Samantha to our family. She is an adorable Black and Tan, however, she’s not so adorable at 3:27 in the morning when she is barking in her kennel to be let out. Since I was awake so early, I decided to treat myself to chocolate chip pancakes.
I use coconut oil in the batter. It makes the pancakes SOOOO delicious! Bonus: coconut oil has lots of added health benefits.
COCONUT CHOCOLATE CHIP PANCAKES
2 cups of all purpose flour
2 T. Sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 cups buttermilk
1/4 cup coconut oil
Mix dry ingredients. Combine wet ingredients, and add to dry ingredients. Do not over mix. Pour onto a preheated, buttered griddle with a 1/4 cup measure. Sprinkle with about 8 semi-sweet chocolate chips per pancake. When bubbles form on top, flip pancake and cook for about a minute more. Serve with sweet cream butter and real maple syrup. I also ate pork links with my pancakes this morning, but have it with your choice of breakfast meat. It is totally worth the extra cardio I will be doing today. Makes 16 pancakes.
